An activated nut is a nut that has been soaked in water to release its enzyme inhibitors. Activated nuts are easily digested and more nutritious than raw or roasted nuts. Raw nuts contain enzyme inhibitors that cause digestive problems and nut intolerances in some individuals. They also reduce our body's ability to uptake other nutrients. Activating (or soaking/sprouting) nuts releases the enzyme inhibitors and makes these tasty treats even more nutritious!
After activating the nuts and seeds we dry them at low temperatures (<40 degrees celsius) and sometimes flavour them to make them crunchy and delicious. As we take more moisture out of the nuts when drying them than what we put in when we soaked them the nuts have a longer shelf life and less chance of going rancid.
